Microwave Risotto
An easy meal to prepare in the van! from Helen
Cook a chopped onion and clove of garlic in a small amount of butter for 3-1/2 mins Stir in 1 cup Aborio rice Stir in a couple of cups of assorted chopped vegetables. Add 2 cups boiling water and stock cube. Put lid on and cook 15 mins. (do not stir) Stir through grated parmesan prior to serving.
Zucchini Chocolate Cake
Another use for those excess zucchinis - also from Helen
180g margarine, 1 cups sugar, 3 eggs, 2 tsp vanilla, 1/3 cup milk, 2 cups grated zucchini, 1 cups wholemeal plain flour, 1-1/2 cups plain flour, 1 tsp baking powder, 1-1/2 tsp carb soda, 1/2 cup cocoa, 1 tsp cinnamon. Cream margarine and sugar, add eggs, vanilla, milk and zucchini. Sift dry ingredients. Mix well. Bake in 2 greased loaf tins 180o for 45mins. Ice with chocolate icing, sprinkle with coconut.
Strawberry Ice Cream
Another delicious recipe from Valda
300 mls thickened cream, 250g ripe strawberries, 3/4 cup caster sugar, 3 teaspoons lemon juice Chop strawberries in half. Process in food processor. Mix sugar into strawberries. Leave stand a few minutes. Add lemon juice. Whip cream until it holds soft peaks. Add strawberries and mix thoroughly. Freeze.
Chocolate Nibbles
We shared these delicious morsels during Happy Hour at Swan Hill
1/2 cup rolled oats, 1/4 cup coconut, 1/2 cup icing sugar, 50g margarine melted, orange or peppermint oil (about 1/2 teasp.) Process all until fine. Add oil and melted margarine to combine. Shape into small balls (about 2 cm size). Cover with plastic wrap 15 mins in frig. Melt 125g dark chocolate buttons, dip each ball into chocolate and place on plate. When set drizzle with melted white chocolate buttons - this is optional. Store in frig. Keeps 2 weeks.

Yummy biscuits
125g butter, 1 cup raisins, 3/4 cup sugar, 1 cup S.R. flour, 1 egg, Cornflakes (for rolling). Beat butter and sugar to cream. Add egg and beat. Add raisins then flour. Roll in corflakes and place on buttered tray. Bake in moderate oven until crisp.

Honey Nougat Bars
A handy slice which keeps well
1 cup S.R. flour, 1 cup rolled oats, 1 cup sugar, 1 cup coconut, 125g melted margarine, 1 tab. honey, 1 egg lightly beaten, diced almonds Sift flour and put in bowl with sugar, rolled oats and coconut and mix lightly. Add melted margarine, honey and egg to flour mixture and mix well. Spread into greased slice tray and sprinkle over diced almonds (press lightly into mixture) and bake in slow oven for 35 mins. When cool cut into fingers.
