Smoked Chicken Couscous
250g smoked chicken breast
¾ cup couscous
1 Tab. olive oil
¾ cup boiling water
Salt and pepper
2 Tab. raisins or currants
2 Tab. toasted almonds
1 Tab. chopped parsley, chives or coriander, if available
1 bunch asparagus or any other green vegetable
1. Place couscous in a heatproof bowl. Add oil and boiling water. Stir well and cover bowl. Stand for 5 minutes, stirring once.
2. Stir in chopped herbs and season.
3. Place on plates topped with sliced smoked chicken.
4. Garnish outside of plate with cooked green vegetables.
